Recipe: Peanut Butter Apple Muffins

Ingredients
1 cup of unsweetened applesauce
1 cup of peanut butter, creamy and all natural (or other nut butter of your choice)
2 eggs
6 tablespoons of honey
2 tablespoons of vanilla extract
2 teaspoons of ground cinnamon
1/2  teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon ground ginger
1/4 teaspoon ground cloves
2 small apples (such as Gala, McIntosh, Fuji or your choice of apple type you prefer), peeled and diced
small amount of oil for greasing the muffin pan

Directions
Preheat oven to 400 degrees. Grease a muffin pan lightly with oil. Place all ingredients except for the peeled, diced apples into a blender. Blend all ingredients until smooth. After mixed, stir in the diced apples with a spoon until well incorporated. Do not blend in the diced apples. Simply stir them in.

Pour or scoop out muffin mixture into the muffin pan, filling each muffin a little bit more than half way. This should make about a dozen muffins. Bake for 22 to 25 minutes at 400 degrees until done. Enjoy these protein and fiber rich muffins as a snack or breakfast.


Makes 12 muffins.
